Purely Pancakes

I love these pancakes because they are made with only a few pure ingredients. They are gluten-free, easy to make and I always feel good after enjoying them. They can be topped with vibrant seasonal fruits and taste divine drizzled in nut butter.


– One Full Pouch of Grain-Free Pancake Mix

– 1/2 Cup + 1 Tablespoon Coconut Oil

– 1/3 Cup Water

– 2 Tablespoons Ghee Butter

– 1 Cup + 1/3 Cup Mashed Ripe Banana

To Top:

– 1 Pinch of Cinnamon

– Seasonal Fruits of choice

– Date Nectar

– Almond Butter

To Make:

1 Gently whisk together the coconut oil, banana and water

2 Fold in mix until combined (doesn’t need to be perfect)

3 Cook pancake mix over medium-high heat on a preheated, skillet with ghee butter in it, for about 3 minutes per side or until lightly browned

4 If you would like to top with bananas: Slice and cook bananas in a low-medium heat preheated skillet with ghee butter in it for a few minutes until lightly brown (optional: add cinnamon)

5 Add toppings onto pancake stack and then drizzle with date nectar and or almond butter
